    Susci & Chips, F.lli Guzzini – 2006

    Ben prima delle mode sul Food Design, la Fratelli Guzzini lancia un progetto di dialogo tra designer e chef per ripensare la tavola contemporanea a partire dalla mutazione dei più recenti usi e costumi. Talocci si relaziona col grande chef Moreno Cedroni, inventore del Susci, il pesce crudo all’italiana che ripropone con orgoglio una tradizione culinaria del nostro paese rivisitata in chiave personale e moderna. Il riferimento all’oriente e al Giappone in particolare si sposa quindi perfettamente con una visione di cucina fatta per piccoli assaggi, nella quale il tempo della convivialità viene scandito da più pietanze diverse e da progressivi passaggi gustativi. La designer articola questa idea in un vassoio che accoglie piccoli piatti-contenitori dotati di due lati dal bordo largo in modo da facilitarne la presa e lo spostamento. Un sistema pensato non solo per chi cucina e per chi consuma il cibo, ma soprattutto per l’atto dello scambio e della condivisione in una dimensione partecipata del grande rito della cucina del presente e del futuro.

     

    Long before the fashions of Food Design, Fratelli Guzzini launched a project of dialogue between designers and chefs to rethink the contemporary table, beginning with the latest changes in habits and customs. Talocci worked with the master chef Cedroni Moreno, inventor of Susci: the Italian-style raw fish dish which proudly re-proposed our country’s culinary tradition and revisited it in a personal and modern way. The reference to the East and Japan, in particular, blends perfectly with a vision of a cuisine made up of small tasters, where conviviality is marked by a progression of different dishes in an evolving array of tastes. The designer articulates this idea in a tray accommodating several small, plate-containers, each of which has two wide-edged sides, thereby making them both easy to hold and move. A system designed not only for those who cook and consume food but, above all, for the act of exchange and sharing, in a participatory dimension, the culinary rites of the present and the future.
